If you are like me, and really aren’t much of a cookie maker, let me save you some time.

Purchase these perfectly sized cookies.  I spent days researching best recipes, cookie cutters, how to make cookies flat and not spread.  My sister, a fantastic baker, urged me to purchase cookies and I spent 10 hours haunting stores until I came up with the right sized, tasty cookies.  My Maj Jongg group loved them – and they are cheap and save hours of time.

Use royal icing because it hardens the base, and the stencil won’t smudge or spread.

Again I spent hours learning how to make it – turns out the packaged icing works great and all you need to do to make it is add 1/3 cup of water to the contents poured into your mixer.

If you are new to royal icing, you need to divide into 2 bowls with 2 consistencies.

The first bowl is to spread a smooth white background on the cookie. For the spreading method,  I added white coloring to make the background pop!  I also add a flavor – usually pure vanilla. I also added a teaspoon of water to make a smooth, satiny finish.  See picture below for comparison.

There are four  ways to do this.  All four  you let dry overnight.

DIPPING:             Video how to dip.    (not sure why she repeats everything – I fast forwarded a bit)

STENCIL:              I cut out a stencil using a paper plate, in the shape of the cookie and put on  white icing using a thicker-than-flood consistency.

SPREADING:      See video below stencil video.

 

 

The second bowl is for stencils. Divide the second bowl in half  into two different bowls for red and half for green.

Black frosting is actually difficult to make so I used this. Make it when you are flooding/dipping the cookies and let it set overnight and it will be very black.  If you can’t use the stencil black , then try this and divide the second bowl into three.

I used green and red food coloring, the red was a bit too pink so I put a bit of black in it – practice with little trial amounts until  you get the colors  you want.

I also prepare these when I am flooding/dipping the cookies because the colors are more vibrant when they set overnight.

When making the icing in advance, wrap plastic wrap on the top and keep in a covered bowl.

I also added flavors to the colors anise to the black icing,  mint to the green icing, and peppermint to the red icing.

 

I purchased stencil holders and they saved me so much time.
